This specialty is typical from our hill and mountain areas, where wild boars were often shot down to defend crops and their meats were mixed with pork meat to get lean and savoury salamis. The leanest parts of the boar, pork bacon and shoulders are the main ingredients in this product.
With its medium grinding this salami is stuffed into natural collagen casings and seasoned for about 30-45 days.
Its weight is about 300 g. Its lean slice looks bright red and has a robust taste and a persistent scent.

Its strong flavor can be better appreciated in combination with a structured red wine and good homemade bread. Consumed with a semi-aged soft cheese whose flavor is not too intense, it satisfies even the expectations of the most demanding palates.
This salami has the same taste and texture as its smaller version. The leanest wild boar meats together with bacon and shoulders from Italian heavy pigs are stuffed into natural collagen casings, wrapped with a net and seasoned for about 45/60 days. The result is the robust taste and the intense scent which identify this product family.
This salami weighs about 1,8/2 kg.

They also match aged cheese, but it is the combination with fresh cheese that perfectly highlights their sweet, but persistent taste.
To produce these delicious sausages, which are filled in natural pork bowels, we use the same mixture of boar salamis or other boar specialties.
After a short aging which goes from 15 to 20 days, the sausages are ready to be tasted since they have reached the right consistency which allows to enjoy their singular taste.
These products are packaged in modified atmosphere in order to preserve their singular taste and scent. One package weighs about 2,5 kg.
